Not just because we produce and eat a lot of sausage — though we certainly do. It’s because sausage tells the story of who we are. Follow the (sausage) links and you’ll find the people, neighborhoods and traditions that built and sustain Greater Cleveland.
Signal Cleveland is setting off to learn about Cleveland’s sausage traditions from Polish kielbasa to Slovenian smoked to Hungarian kolbasz and more.
We want to learn about the sausage-makers who have generations old recipes, churning out links in butcher shops or to serve up at church festivals and family gatherings. We also have a newer wave of sausages to love, brought by more recent immigrants or conjured up by local chefs forging the future of Cleveland’s sausage scene.
This isn’t really a contest. It’s a communal storytelling (and tasting) project. A celebration of sausage — and people and culture.
That’s where you come in. We’re asking readers to make sure we leave no sausage unturned as we strive to learn how Cleveland’s sausage traditions were made.
